I feel like I keep putting the same description for all my recipes so far; simple & delicious. But it's true! As a busy person, meals that are quick and easy are important. And just because it's simple, doesn't mean that you have to give up taste! Plus, I love a recipe that is easy to make changes and adjustments to, so it never gets boring!


Veggie Burger Sandwich

Ingredients

  • 2 slices bread of your choice

  • ½ an avocado, smashed

  • ¼ cup chopped cucumber

  • ¼ cup chopped tomato

  • 1 or 2 cooked veggie burgers (my absolute favorite is Hilary's World's Best Veggie Burger)

  • 2 tbsp vegan mayo (I like Follow Your Heart Vegenaise)

  • Optional: leafy greens or sprouts

Instructions

  1. Cook veggie burgers using your preferred method (I like to use the air fryer set to 400F for 15 mins)

  2. Smash avocado in a bowl

  3. Add chopped cucumber and tomato to smashed avocado and mix. Add salt and pepper to taste

  4. Spread vegan mayo on both slices of bread

  5. Assemble mixed veggies, veggie burgers, and any leafy greens or sprouts of your choices

  6. Cut sandwich down the middle and enjoy!
