Pesto Zucchini Sandwich

This is such a delicious, comfort food sandwich that I could eat two! It's very quick and easy to make, and requires minimal effort. It is, of course, vegan. And, like all my recipes, easy to make adjustments to your liking!


Pesto Zucchini Sandwich

Ingredients

  • 2 slices bread of your choice

  • 2 tbsp pesto (store bought or from my recipe)

  • 1 small zucchini, cut in long, thin slices

  • 1/2 an avocado, sliced or mashed

  • 1/4 cup vegan feta, crumbled (I like Violife just like feta block)

  • olive oil for sautéing

Instructions

  1. Slice your zucchini into long, thin strips

  2. Heat up oil in pan/skillet on medium heat

  3. sauté each zucchini strip for a couple minutes on each side until browned

  4. Spread your pesto onto both slices of bread

  5. Assemble your zucchini, avocado, and feta in any order you prefer

  6. Cut your sandwich down the middle and enjoy!
